Apple Cinnamon Salad

Nothing gets better than a homemade salad dressing. It just doesn’t compare to store bought. I’ve been looking for a new dressing that wasn’t full of sugar but was still a little bit sweet. I was flipping through one of my favorite vegan cookbooks from Oh She Glows and saw a delicious vinaigrette salad dressing and decided to give it a try. It was SO good! I could almost drink it! I love the cinnamon with the apples and pecans. I’ve made the vinaigrette twice since last week and have had it for lunch almost everyday. I’m still not sick of it. It’s so refreshing and you feel great after eating it. It makes my belly happy. Nothing like a good, summer salad after a long run.

Here is the recipe below (adapted from Oh She Glows):
Apple Cinnamon Vinaigrette
Serves 4-6
3 tablespoons apple cider vinegar
2 tablespoons of fresh lemon juice
3 tablespoons of pure maple syrup
½ teaspoon ground cinnamon
¼ teaspoon fine-grain sea salt
1 tablespoon extra-virgin olive oil
2 tablespoons unsweetened applesauce
½ teaspoon minced fresh peeled ginger (or a sprinkling of ground ginger)

In a small bowl, whisk together all the ingredients until well combined. Taste to see if you would prefer it to be a little sweeter or more sour. Add more maple syrup for sweeter or lemon for more sour.

Apple Cinnamon Salad

  • Baby kale or chopped kale
  • Apple, cored and finely chopped
  • Dried cranberries
  • Toasted pecans (or walnuts)

Assemble your salad the way you like it and drizzle the yummy apple cinnamon vinaigrette on top. Give it a mix and you have yourself a delicious salad!
