Happy Thanksgiving everyone! I hope your day is filled with gratitude, family, and friends. I started the day off with a great Super Step class at the gym and came home to make these delicious waffles! They taste so good and you wouldn’t believe that they are insanely healthy for you! No sugar added to the batter, gluten-free, oil-free, and vegan. I topped it off with some fresh cut up fruit and pure maple syrup. I also like to top it off with some homemade chia seed jam instead of maple syrup. I love how these are healthy, protein packed, and loaded with fiber. Who knew a waffle can be so healthy and taste so good. Not to mention, you just throw all the ingredients into the blender and blend away! So easy and fast! If you have some ripe bananas, make these today! Banana Oat Blender Waffles
Makes about 3-4 waffles
2 cups rolled oats 1 ripe banana 1 3/4 cups unsweetened almond milk 1 1/2 tsp cinnamon 1 tsp vanilla extract 1 Tbsp ground flax seed 1/4 tsp salt 1 Tbsp baking powder
Heat your waffle iron on medium-high. Put all ingredients into the blender and blend until smooth. Then add the baking powder and blend only until combined (about 5-10 seconds). Let your batter rest for 5 minutes.
Pour batter into waffle iron and cook according to your waffle iron’s instructions. (I like to cook them a little longer so the edges get a little crispier, then I don’t get mushy waffles.)
Enjoy with your favorite toppings and some pure maple syrup!
