Chocolate Chip Banana Bread Waffles

Saturdays are usually my special breakfast days where we have a green smoothie and something besides homemade granola for breakfast. Don’t get me wrong, I’m never tired of homemade granola, but I do like to branch out and eat some of my favorite breakfast foods like waffles once in awhile. Why not indulge on a Saturday morning? Also, why not have banana bread for breakfast in waffle form? Throw in some chocolate chips and you get a dang good breakfast. These vegan chocolate chip banana bread waffles are not as crispy as your normal waffles, but are tender, soft, moist, and fluffy just like banana bread. I like to cook them a little longer in the waffle iron to get a slightly crispy edge. They are so easy to make and have no added sugar because of the sweetness from the bananas. You definitely score there! Chocolate Chip Banana Bread Waffles
Makes about 4 waffles

1 cup whole wheat pastry flour
1/4 cup oats
1/4 tsp salt
1/2 tsp ground cinnamon
1 cup unsweetened plain almond milk (or other non-dairy milk)
1 flax egg (3 Tbsp ground flaxseed + 3 Tbsp warm water) 
1/2 tsp vanilla extract
2 large ripe bananas
2 1/2 tsp baking powder
1/4 cup dark or semisweet chocolate chips (non-dairy for vegan)

First, prepare the flax egg by combining the flaxseed and warm water in a small bowl, stir and set aside. Peel and mash banana and baking powder together with a fork.

Add in milk, flax egg, and vanilla and stir.

Next add salt, oats, and cinnamon and stir. And then add flour and stir until just combined. Fold in chocolate chips.

Preheat waffle iron and let batter rest for 5 minutes.

Once iron is ready, spray generously with cooking spray (this is key for the batter not to stick) and cook according to instructions.

Serve with pure maple syrup and whatever toppings your heart desires.
