Need a ridiculously easy dinner recipe for those crazy days when there is no time to cook dinner? Seriously this crockpot recipe is the easiest recipe you will ever make for dinner. Literally throw everything in the crockpot, turn it on, and you get a delicious meal in just a few hours. This is also a kid friendly recipe (both making and eating). The rich flavors developed in this crockpot dinner are so dang good that no one would ever know it took two seconds for you to prepare. Just put everything in the crockpot before you leave in the morning and come home to a delicious aroma and healthy dinner. I love this when I have to work late nights and don’t want to make dinner when I come home. These lentil sloppy joes are vegan, oil free, dairy free, gluten free, and oh so so healthy. Your family, including the kiddos, won’t be complaining about this meal!
Crockpot Lentil Sloppy Joes Serves 6-8 1 cup dried brown or green lentils 1 1/2 cups vegetable broth 28-oz can crushed tomatoes or diced tomatoes 1/4 cup tomato paste 1/2 yellow onion, chopped fine 3 Tbsp pure maple syrup 1 Tbsp yellow or dijon mustard 1 Tbsp apple cider vinegar 1 Tbsp minced garlic 1 1/2 tsp dried oregano 1 1/2 tsp smoked paprika 1 Tbsp chili powder 1 tsp sea salt dash of black pepper
Combine all ingredients in the slow cooker. Stir and cook on low for 7-8 hours or on high for 3-4 hours.
Enjoy!!! Serve with vegan buns, bread, or brown rice. Store leftovers in an airtight container in the fridge.
